Lemon Curd Cheesecake (Instant Pot)

Here is the cheesecake pan I used: http://amzn.to/2i6qC5B Lemon Curd Recipe: Makes enough to cover two 6-inch cheesecakes 6 egg yolks 1/2 cup of sugar 1/2 cup of lemon juice Zest of 1 lemon 1/2 cup of butter Mix together egg yolks, sugar, lemon juice and zest in a small saucepan. Cook, stirring constantly, over medium heat for 6-10 minutes until thick enough to coat the back of a spoon. Remove from heat and add butter in chunks. Stir until butter is melted and lemon curd is smooth. If using as a cheesecake topping allow to cool for 15 minutes before pouring on top of the cheesecake.
