Wood chips are always soaked to remove excess tannins and tannins, preventing your spirit from becoming a slab of wood. Instructions: Take 500 grams of wood chips and soak them under running water (or change the water every hour, preferably every 30 minutes) for 12 hours. Next, take a stainless steel or enamel pot with a capacity of 8-12 liters, place the wood chips in the bottom, and fill it almost to the brim with cold water. Place it on the stove, bring it to a boil, and boil for 10 minutes. Let it cool to 30-40 degrees Celsius. Drain, rinse with cold water for 5-10 minutes. Add more cold water, but less (10 cm to the brim), and bring it back to a boil. Boil for 10 minutes, turn off the stove, and let it sit for 2-3 minutes. Take a tablespoon of baking soda and begin pouring it into the pot (be careful, as foam may form). Then, after the foam subsides, stir, cover, and let it cool completely to room temperature. Once cool, drain and rinse the pot and wood chips again with running cold water for 10-15 minutes. Be sure to wash thoroughly; nothing should remain on the sides of the pan or on the wood chips. Then fill the pan with water again, as before, and place it on the stove. Bring to a boil, simmer for 10-15 minutes, let cool, drain, and rinse with cold water for about 20 minutes. Drain everything in a colander and let the water drain. Now the wood chips are ready to be added to the distillate. Consumption: approximately 5 grams per liter. The procedure is similar for planks and sticks, but it's best to soak them for 2-3 days, changing the water every 3 hours, as the grain size is much larger than that of wood chips.
