Starting by trolling some of the South Florida Fishing Channel weedless squid rigs. Our favorite colors the black and purple and silver glitter feather. And we start catching lots of Jack and Mahi. After catching a nice sized mahi we hook a shark! It was a lot of fun, but it's time to go to the reef. On the way back towards key largo from fishing offshore we stop at the reef and dive in the water to look for lobster and other creatures we can cook for dinner. We catch lots of lobster! Then head back to the dock where we clean all the fish we caught. I take these fish home for the cooking part of this fishing episode and make a homemade lobster and fish spaghetti sauce. This catch clean and cook turned out amazing! Lobster Spaghetti Sauce Recipe Ingredients: 8 ounces fresh lobster meat 1 tbsp olive oil 1 small yellow onion 3 cloves garlic 1 tbsp tomato paste 1/2 cup tomato puree Passata 1/4 cup heavy cream 1 pound pasta 2 tsp kosher salt for sauce/ additional salt needed for seasoning boiling waters 1/2 cup fresh basil leaves torn 1 tbsp chives finely chopped Instructions: Start by bringing a large pot of salted water to a boil. The water should taste like the ocean Boil the lobster for 5-6 minutes. Remove lobster and meat from the tails. Reserve a cup of pasta water for later. In a skillet, saute onion and garlic in olive oil until softened, about 3 minutes. Add tomato paste, stirring to coat the onion and garlic as it caramelizes and its color begins to go deep reddish brown about 2-3 more minutes. Add a 1/2 cup of the lobster broth to deglaze the pan. Stir and reduce the liquid Add passata. Stir and cook until liquid is further reduced . Add another 1/2 cup of lobster broth, stir and cook until liquid is reduced by another inch or so. Once reduced add 1/4 cup of lobster broth and a 1/4 cup of starchy pasta water. The liquids should completely evaporate into the sauce mixture. Reduce heat to low and add 1/4 cup of heavy cream. For extra creamy sauce use 1/2 cup. Blend the cream into the sauce. Add the lobster meat and pasta. Stir or toss well to coat the pasta and distribute the lobster meat evenly through the sauce. Add chive and basil, toss once more Subscribe or I'll steal all your bait!
