Easy Sourdough Donuts (With Birch Syrup!) | Alaska Off Grid Kitchen
We are on day 2 of boiling down sap to make our sweetener for the year here on the homestead, and we made one of our favorite recipes- sourdough donuts! These are no knead, and only take half a day to make. A quick fry and they are done! They were the perfect treat after working in the bush kitchen all day, and a wonderfully sweet use of our Birch Syrup! HOMESTEAD RECIPES BIRCH SYRUP SOURDOUGH DONUTS -1/2 C active starter -2 C milk or water -1 egg -3-4 tbsp birch syrup (or maple, or honey) -3-4 tbsp melted, and cooled, butter -1 tsp salt -1 tsp cinnamon -4 C flour cinnamon, sugar for dusting confectioners sugar + syrup for dipping 1. Mix starter, water, egg, butter, sweetener, salt. Add flour and cinnamon, mix until a shaggy dough forms. Rest 1.5 hrs, do 3-4 stretch and folds over 30 min periods. 2. Shape donuts (i used a wide mouth mason jar ring to cut), let rest on floured parchment for 1 hr. 3. Fry in tallow, or another oil, until golden on both sides. Dip or dust with toppings! Variations; chocolate (add 1/4C cocoa to flour, and cocoa to confectioners sugar (+1/4 C milk) to make a chocolate dip).
