Franco demonstrates how to butcher a whole spring lamb. Using his many years of experience as a skilled butcher, he talks you through the process step by step. The lamb featured is a 5 month old, Poll Dorset crossed with a Beltex and it has been very well fed! The buttery fat on this animal is unbelievable. Pay attention and you will see a few familiar tips and skills, including butcher's knots, how to bone a lamb shoulder and tunnel boning.
