SAIGON MIGHT HAVE THE BEST SREET FOOD IN ASIA

In this episode, InTheKut spends the day eating around Saigon through some of the city’s classic street food dishes and neighborhood spots. The first stop is bò né, one of Saigon’s classic breakfast dishes. Steak, eggs, pâté and onions arrive on a scorching hot plate still crackling from the fire with fresh bread on the side to soak everything up. Rich, savory and loaded with flavor, it’s the kind of breakfast that immediately feels tied to the energy of the city itself. From there, they stop at a roast pork bánh mì cart where crispy pork crackling, herbs, pickled vegetables and sauce are packed into a toasted Vietnamese baguette. The balance of textures is what makes it stand out. Crunchy skin, soft bread, fresh herbs and fatty pork all in one bite. The episode then shifts into Chợ Lớn, Saigon’s historic Chinatown, for a bowl of hủ tiếu sa tế made with deer meat. Thick satay broth, chili oil, peanuts and spice give the dish a completely different profile from the noodle soups most people associate with Vietnam. Heavy, aromatic and deeply influenced by the Chinese community in the area, it’s one of the more unique meals featured in the series so far. To finish the night, InTheKut heads back to District 4 for cơm tấm, one of Saigon’s defining dishes. Broken rice paired with smoky grilled pork, fish sauce, egg and all the small details that make the dish such a staple across the city.
