Surf fishing in Destin, Florida is a popular pastime of locals and visitors alike, and one the most sought after catches is the Florida Pompano. Today we head out to the beautiful beaches of Destin and bring back a nice Pompano to show our favorite recipe for this delicious fish. Pompano and Grits Recipe: Grits: -2 cups of low-fat milk -2 cups of water -1 teaspoon of Kosher salt -1 cup yellow cornmeal grits -2 tablespoons of salted butter -1 cup shredded white cheddar cheese Sauce: -4 slices of bacon chopped -1 1/2 pounds of shrimp -1 1/2 cups chopped onion -3 cloves of garlic minced -3 tablespoons of cornstarch -1 1/2 cups low salt chicken broth -1 cup heavy cream -1 tablespoon of butter -1 teaspoon of cayenne pepper -1 teaspoon of hot sauce -1/2 teaspoon of ground black pepper -1/2 cup chopped green onions -1/4 cup of chopped parsley Pompano: -Clean and skin filets -Rub lightly with olive oil -Generous seasoning of blackening seasoning (your choice) -Grill in cast iron skillet or flattop grill with oil and butter If you love catching Pompano, share with us your best recipe down in the comments and we’ll use it in a future video.
