Fresh Shrimp Silver Needle Noodles (aka. Rat Tail Noodles) Recipe (鮮蝦銀针粉) with Papa Fung

Originally a Hakka dish that later became popular in Cantonese cuisine. The translucent chewy noodles are stir-fried with fresh shrimp, ham and green peppers. The noodles themselves are har gow skin made into noodle form. Timestamps: 0:00 Intro 00:18 Part 1: Needle Noodles (Prep Work) 2:04 Part 2: Toppings 4:27 Part 3: Needle Noodles (Noodle Making) 5:30 Part 4: Stir Fry 6:41 Part 5: Assembly 6:55 Finale -------------------------------------------------------------------------------------------------------------------- SILVER NEEDLE NOODLES [鮮蝦銀针粉] RECIPE This recipe makes 4 bowls of needle noodles [製成四碗] Needle Noodles [銀針粉料] 450g Wheat Starch [澄麵] 100g Potato Starch [生粉] 15g Lard [人造豬油] 600ml Hot Water [熱水] Toppings [配料] 200g Ham [火腿] 200g Shrimp [蝦] 1 Green Pepper [青椒] 2 Eggs [蛋] Some Salt [鹽] Some Sugar [糖] Some White Pepper [胡椒粉] Some Sesame Oil [麻油] DIRECTIONS [製作] Needle Noodles [銀針粉] 1. Combine wheat starch and potato starch, pour hot water and stir continuously until dough-like. Knead, add lard, knead some more until smooth. Pour some oil on dough, massage it on the dough, wrap, set aside for 30 minutes [混合粉料撞入熱水,快手搅拌,取出搓壓,中途加入人造豬油,搓揉至完全融合和滑身,搽油在面用保鲜膜包好放置三十分鐘。] 2. Divide the dough into tiny even pieces, push and roll dough to shape it into needles, set aside [取部份麵糰搓長切細粒,搓成两頭尖待用。] 3. Toss in oil, steam for 7 mins once water boil [捞些少油免黏,放蒸鍋內蒸,水滚計蒸七分鐘即可。] 4. Toss to separate noodles, set aside [取出撥散待用。] Toppings [配料] 1. Marinate shrimp with salt and potato starch, set aside for 10 minutes. Rinse it all off, set aside to dry [蝦先用鹽和生粉抓匀腌十分鐘,冲洗乾淨瀝乾備用。] 2. Scramble eggs, pan fry into a thin layer, slice into thin strips, set aside [蛋打散煎成蛋皮,切𢇁備用。] 3. Slice ham and green pepper into thin strips, set aside [火腿和青椒切𢇃備用。] Assembly [组合] 1. Heat up wok, drizzle some oil, stir fry shrimp until fragrant, add in green peppers, continue cooking. Add in needle noodles, stir fry until translucent, add in some salt, white pepper, sugar and sesame oil and mix. Add in ham, and half of the eggs, mix until combined. [熱鑊落油炒香蝦放青椒炒香,加銀針粉抄匀加調味炒匀,加入火腿和部份蛋𢇁拌匀即可。] 2. Place some egg strips in bowl first, then place the noodle mixture into bowl, flip bowl over plate to reveal dish.
