Easy Cobbler Muffins in 3 flavors! (Great for picnics!)

Moist yummy cobbler muffins, perfect any time! Cherry, Blueberry and Peach my favorite! Easy to make, just 5 ingredients plus filling and I'm sure you'll have everything on hand! Great to take to picnics, potlucks, morning coffee bars, I am always asked for the recipe whenever I bring them! True story I think its one of the reasons my husband of 40 years fell in love with me because I made him peach ones when we first met :) ....And what he said then was, these are great, but my favorite flavor is cherry, can you make them with cherries? I laugh now because I have made them in all 4 flavors that I make my home canned pie filling in - Peach, Cherry, Blueberry and even Apple on occasion. Cream together well, then add: 4 eggs (one at a time and beat in after each addition) Last stir in : 2 cup all-purpose flour 1 Tablespoon Lemon Juice (I use bottled) *This recipe does not have any soda or baking powder in it. So no, it didn't get forgotten, it doesn't need any. You can bake in a 9 x 13 greased pan, and plop the filling on top. Or as Muffins - which is the way I usually always make them in a cupcake pan with lined papers. Then they are so easy! Easy to take, easy to eat, and well enjoyed at gatherings. I love to use my ice cream scoop and scoop batter into lined cupcake pan, indent a small well in the dough with a back of spoon and plop with heaping tablespoon of pie filling. Bake at 350 for about 20-25 minutes. Eat warm :) or they are moist & wonderful when fully cool! Makes 18 cupcakes You can drizzle them with icing after cooled, but I rarely ever do anymore, because they are loved so well.
