Croustade aux pommes
Apple crumble is a pastry originating from the Southwest of France, made with a stack of thin layers of stretched dough filled with apples. The version I'm offering you is a simplified recipe that I make with filo pastry because making stretched dough requires a lot of time and a specific skill to achieve the desired thinness. As you might imagine from its name, the crumble should be crispy. By buttering and sugaring the layers of filo pastry, then crumpling them, you achieve this deconstructed and crispy finish! I pre-bake the apples in a little butter; it's a delicious treat. Those who wish can add a little Armagnac or even a drop of rum to the apples while baking. This completely unusual "cake" will have crumbs everywhere when served, but that's what makes it fun and appealing. Either way, I find it delicious and even addictive.
