Cajun Spiced Salmon and Corn Salsa Ingredients: For the salmon: ½ salmon fillet Cajun seasoning 1 heaping tablespoon clarified butter For the Orange Corn Salsa: ½ corn on the cob ½ tomato 1 small red onion ½ orange ½ avocado Zest of 1 lime Juice of ½ lime 7-8 jalapeno peppers Salt Olive oil Instructions: Place the salmon on a cutting board and remove any fatty parts of the salmon. If there are any bones, remove them with tweezers. Spread the Cajun seasoning on a large, flat plate. Place your pan on the stove, add clarified butter, and heat thoroughly. Meanwhile, coat all the fleshy parts of the salmon with the seasoning. Once heated, place the fish, seasoned side down, in the pan and let it cook. Turn and cook until the sides are browned. Then, turn the fish skin side up and cook for 1 minute. Then, cook in a preheated oven at 180°C (350°F) for 5 minutes. For the Corn Salsa: Scrape the corn from the cob. Dice the tomatoes. Finely chop the red onion. Segment the orange and dice it. Peel the avocado and dice it into small cubes. Place all the vegetables in a mixing bowl. Zest the lime and squeeze out the juice. Finely chop the jalapeno peppers. Add salt and olive oil and mix. To serve: Place the fish on a plate after removing it from the oven. Drizzle the corn salsa lightly over the fish. Serve with potato salad.
