Recette D'Ekomba Ou Gâteau De Maïs Aux Arachides grillé

In this video, we'll show you how to make Ekomba, or Peanut Corn Cake. It's a cake made from dried cornmeal with peanuts. Ingredients 1 kg of crushed cornmeal 1 kg of roasted peanut paste 1/4 liter of red palm oil 100g of shrimp Salt Banana leaves, parchment paper, or other wrapping of your choice Preparation 1- Lightly roast the peanuts in a casserole dish until brown, then crush to obtain a powder or paste. 2- Put the peanut paste in a basin or a terrine and add water gradually, mixing by hand, with a spatula or a ladle to obtain the consistency of a liquid paste. Incorporate the corn flour toasted beforehand, mix the 2 pastes so as to obtain a homogeneous composition 3- Salt and stir one last time, add the red oil 4- Take your banana leaves that you have taken care to soften on embers or in hot water, make small packages that you will close hermetically. 5- Place a pot on the stovetop, add a few leaves, and place the ekomba balls inside. Cook over high heat for about 2 hours. Note: Best served hot.
