Join me in this episode and learn how to make a an umami seasoning recipe made from shiitake, kombu, and other great stuff! Plus, we'll make a delicious mushroom broccolini rice recipe together too! Let's begin HOMEMADE UMAMI POWDER SEASONING INGREDIENTS: 1/4 cup salt 2 tbsp onion powder 1 tbsp garlic powder 1 tbsp gochugaru 2 tbsp peppercorn mix 20g dried shiitake 3g kombu HOMEMADE UMAMI SEASONING DIRECTIONS: 1. Place all of the ingredients into the blender and blend on high until it turns into powder (or start the spice grind program on the Vitamix Ascent X5) MUSHROOM BROCCOLINI RICE INGREDIENTS: 1 cup short grain rice 2 tsp + 1 tbsp chili oil (   • Most addictive Red Chili Oil Recipe to SPI...  ) 2 + 3 tsp umami powder 1 cup water 350g extra firm tofu 2 tsp dark soy sauce 1 onion 60g broccolini 2 king oyster mushrooms 2 tsp avocado oil 2 sticks green onion MUSHROOM BROCCOLINI RICE DIRECTIONS: 1. Place the short grain rice into a sauté pan. Rinse and drain 2-3 times. Add 2 tsp chili and 2 tsp umami powder. Stir to combine, then add the water and heat on medium high heat. When the water begins to bubble, give the rice a stir and turn the heat to medium low. Cover and cook for 15mins 2. Pat dry the extra firm tofu with some paper towel. Crumble the tofu into a small bowl with either your hands or a fork. Heat up a nonstick pan to medium heat. Add 1 tbsp chili oil followed by the crumbled tofu. Sauté for 4-6mins. Add 3 tsp umami powder and mix to combine. Add the dark soy sauce and sauté for another minute. Then, set the crumbled tofu aside 3. Dice the onion, roughly chop the broccolini, and dice the king oyster mushrooms. Heat the nonstick pan up to medium heat. Add the avocado oil followed by the onions 4. After 15mins, turn the heat off on the rice and allow it to steam futher for another 10mins 5. Sauté the onions for a couple of minutes. Add the broccolini and sauté for a few minutes. Add the king oyster mushrooms and sauté for 3-4mins. Add back in the crumbled tofu and sauté for a couple of minutes 6. Finely chop the green onions and fluff the rice when cooked. Add in the freshly chopped green onions along with the sautéed veggies.
