Instant Pot Rice Pudding: Super Easy & Vegan

I loved helping my mom make rice pudding when I was little. She didn't use coconut milk in hers. She used full fat dairy milk. I think the coconut and oat milk conbination makes the creamiest pudding but feel free to use whatever non-dairy, unsweetened milk you prefer. This will thicken quite a bit as it cools but if you prefer a very thick pudding reduce the oat milk to 2 cups plus the can of coconut milk. INSTANT POT RICE PUDDING Into the bowl of your Instant Pot add: 1 400ml can of full fat coconut milk 2 cups of non-dairy milk of choice (reduce to 1 1/2 cups for a thicker consistency) 1/4 cup of white sugar 1/8 tsp salt 1/2 to 1 tsp of vanilla or maple extract 1 cinnamon stick 1 cup arborio rice (you can also use plain long grain white rice but it won't be quite as creamy) Optional: raisins Give everything a really good whisk to break up the coconut milk solids. Place the lot on the IP and set it to 'sealing'. Cook on high pressure for 3 to 4 minutes. Once it has finished cooking let sit for 10 minutes before carefully and slowly releasing the remaining pressure/steam. When you open the lid the pudding will seem very liquid. It will thicken a lot as it cools. Remove the cinnamon stick and sprinkle the top with powdered cinnamon if desired.
