Chocolate and Red Berry Cake in a Dish Sponge Cake Ingredients 230 ml Whole Milk 1 Egg 1 tsp Vanilla Extract 100 g Semi-Sweet Chocolate 220 g Brown Sugar 230 g All-Purpose Flour (or the finest, self-raising flour you can find) 1 tsp Baking Soda 1 tsp Baking Powder 1/2 tsp Salt 60 g Unsweetened Cocoa Powder 120 g Cold, Unsalted Butter Step by Step 1. Preheat the oven to 150°C (300°F). 2. Grease and flour a 33cm x 23cm (13 x 9 inch) baking dish. 3. Place the milk, egg, and vanilla extract in a bowl and whisk together. 4. Add the melted chocolate and whisk until smooth. 5. Add the brown sugar and whisk until smooth. 6. In another bowl, sift together the flour, baking soda, baking powder, salt, and cocoa powder. 7. Add the cold butter, cut into small cubes, to the dry ingredients and rub together with your hands until the mixture resembles coarse sand and no butter chunks remain. 8. Make a well in the center of the dry ingredients and add the wet ingredients to the mixture. Whisk until smooth. 9. Pour the batter into the prepared pan. 10. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Red Berry Compote Ingredients 1 kg Red berries (fresh or frozen) 250 g White sugar 10 g Cornstarch 20 ml Water Step by step 1. Place the red berries in a saucepan. 2. Cook over low heat for 10 minutes. 3. Add the sugar and cook for another 10-15 minutes until thickened. 4. Hydrate the cornstarch with water. 5. Gradually add the cornstarch mixture to the red berries; you don't need to add it all at once. Stir. 6. Bring to a boil, stirring constantly. Always keep the heat low. 7. Let cool and refrigerate. Chocolate Milk Ingredients 200 ml Milk 20 g Semi-sweet chocolate Step by step 1. Place the milk and chocolate in a saucepan and heat over low heat. Stir. 2. Moisten the sponge cake with the freshly made chocolate milk. Since it's in a dish, you can pour all the chocolate milk over the cake so it soaks in well. Optional: poke a toothpick into the sponge cake to help it absorb the chocolate milk. Cream Cheese Ingredients 240 g Unsalted butter 240 g Powdered sugar or talc 1 tsp Vanilla extract 530 g Cream cheese Optional: Gel or paste food coloring as needed Step by step 1. Place the softened butter (at room temperature) in a bowl. 2. Beat with an electric mixer until creamy. 3. Sift the powdered sugar and add it to the bowl with the butter. 4. Beat again with an electric mixer until creamy. 5. Add the vanilla extract and beat. 6. Finally, add the cream cheese, beating until fully incorporated. Optional: Tint the cream cheese with food coloring. It's important to add a small amount and mix it in well, making sure the coloring is fully incorporated. I'm tinting half the mixture a lighter pink and the other half a darker pink. Assembly Step by step: 1. Cover the cake with the red berry compote. 2. Place the light pink cream cheese in a piping bag with a nozzle attachment so you can change the nozzle to create different textures in the decoration. 3. Pipe swirls of cream cheese onto the cake, alternating the different nozzles. 4. Place the dark pink cream cheese in the piping bag and repeat step 3.
