Last video of 2025, and what a joy it is to be with Denise and Aimée, two mischievous Gascon cousins ​​who are preparing Gascon croustade for me in their own way... and in Gascon! There's no debate here about whether it's a croustade according to the rules of the art or not; that's not the point, because it's more of a tourtière, Aimée admits... and even then, depending on the region, what resembles a croustade will be called a tourtière... that's another story! The main goal here was to have a good time speaking patois, Gascon, Occitan... call it what you will, but my grandfather also said "patois," like Denise and Aimée. Of course, it's Occitan, Gascon, and patois is the dialect of the countryside, of our farmers, of a nearly bygone era that we must preserve and, above all, not forget. These two amazing cooks remind me of my grandmother, my mother... perhaps they'll remind you of yours? As for the recipe, don't bother looking for measurements, it's all "by feel," but it was excellent! The flavor was there because it was made with heart and generosity... and besides, it wasn't a competition! It was simply a joyful and lighthearted moment in good company; exactly what we need right now, I think...
