vegan caramel raspberry bonbons 🌹🖤 | soft, fruity & elegant

Hi everyone! Today I’d like to show you these vegan raspberry rose bonbons 🌹🖤 This is a vegan caramel-style raspberry ganache that contains no chocolate at all. The texture is smooth, soft, and slightly jelly-like. It may be a bit on the sweeter side, but the raspberry flavor really stands out, and you can also feel subtle hints of coconut cream, which work surprisingly well together. For the design, I was inspired by a dancer that I admire very much, Lia Kim. I wanted to create these raspberry roses in celebration of her birthday. The design was inspired by one of her recent looks, and somehow she really reminds me of a rose, elegant, intense, and expressive. This was a really fun and impactful design to make. Let’s get into it! 🌹 Vegan Raspberry Ganache Ingredients 90 g sugar 30 g glucose 200 g frozen raspberries (to make 70 g raspberry purée) 85 g coconut cream 30 g cocoa butter 2 g salt 🍓 Raspberry Purée Cook the frozen raspberries in a saucepan until fully softened. Then strain the mixture to remove the seeds and weigh out 70 g of raspberry purée. 🍫 Vegan Raspberry Ganache Method Combine the sugar and raspberry purée in a saucepan and mix well. Add the coconut cream and glucose, then continue mixing until smooth. Bring the mixture to a boil and cook until it reaches around 103–105°C. Pour the hot mixture over the cocoa butter and let it rest for about a minute. Then blend until fully emulsified and smooth. Once the ganache cools to around 32°C, transfer it to a piping bag and pipe into the chocolate shells. The consistency is smooth, soft, and slightly jelly-like. Tap the mold gently to level the surface evenly. Let the bonbons rest overnight before sealing. 💬 Final Thoughts I honestly really enjoyed this ganache. It’s very different from traditional chocolate ganaches, but in a good way. The raspberry flavor is bright and intense, while the coconut cream adds softness and roundness without overpowering the fruit. The texture is also really interesting, smooth, creamy, and slightly jelly-like at the same time.
