Martín Albuquerque, dueño del taller “San Isidro” en Barrio Grande, elabora quesos artesanales desde hace 15 años y da empleo directo a más de 10 tlaxquenses. Don Martín narra que, en su taller, el día laboral inicia a las 9 am cuando llega la leche proveniente de diversos ranchos de la misma entidad.
