Harvesting of Manzanilla Aloreña olives in Alozaina (Málaga), the first variety with Protected Designation of Origin in Spain and highly prized in the Spanish market for its flavor. This is a green, fresh table olive that has not had a good season this year. The harvest begins in mid-September with the "milking" of the olive trees, a manual harvesting system that protects the particularly delicate fruit from bruising and damage. The COPUSAN Cooperative has opened modern facilities, which are not operating at full capacity due to the low production this season caused by the lack of rain and high temperatures. Production usually exceeds two million kilos, although this season it is expected to be less than half that amount. COPUSAN has left its old factory, relocating to Puerto de Albar where they have expanded and streamlined the processes for treating, processing, preparing, and packaging the olives. The investment, valued at over two million euros, allows for the simultaneous reception of Manzanilla Aloreña, Hojiblanca, and olives destined for oil production, shortening waiting times for members. One of the new features is the implementation of artificial vision technology solutions that select and calibrate the olives with the aid of a scanner. The Manzanilla Aloreña is the first table olive in Spain with a Protected Designation of Origin (PDO). With antioxidant and probiotic properties, its production process is entirely natural and artisanal, making it a truly exceptional product.
