Lesley cooks Goan hot and sour beef curry

Today I am making a one pot Goan Beef Sour Hot Curry, per a recipe by Alves Fernandes https://deliciousmemorieswithalves.wo... Ingredients: 1 kilo beef, cut in medium pieces 1½ teaspoons salt 1 lime juice 4 teaspoons ginger-garlic paste 4 large onions, chopped 3 green chilies, chopped 1½ teaspoons Kashmiri chili powder 2 tablespoons oil 2 small bay leaves 15 peppercorns 1 inch cinnamon 5 cloves 2 tablespoons Goan coconut vinegar 100 ml tamarind water 3 potatoes, cubed Masala ingredients: 12 Byadgi (Kashmiri) chilies 8 cloves 1½ inch cinnamon stick 30 peppercorns ½ teaspoon turmeric 1 teaspoon cumin seeds 1 teaspoon coriander seeds 2 inches ginger 10 cloves garlic Marinate the beef with 1 teaspoon salt, juice of 1 lime and 4 teaspoons ginger-garlic paste Toast the dry spices for the pickle masala for a couple of minutes. Grind with the ginger and garlic to a fine paste. You can use ample water Add the prepared masala to the beef along with the chopped onions, chopped green chillies and red chilli powder. Stir well for a few minutes and make sure all the beef pieces are coated in the masala Let the beef marinate for 20-30 minutes In a heavy pan large enough to hold the meat, heat 2 tablespoons oil and season with 2 small bay leaves, 15 peppercorns, 5 cloves and 1 inch cinnamon Briefly stir Then add the marinated beef and a cup of water Cover and cook on slow flame. Depending on the size of your beef pieces, it can take between 2-3 hours to cook Towards the end of cooking, add the vinegar, tamarind pulp and potatoes. Cook till potatoes are done and beef is soft Or, cook the beef in the pressure cooker for 8 whistles Check if the beef is soft. If not, give more whistles as needed Once the meat is almost done, add the vinegar, tamarind pulp and potatoes. Cook till potatoes are done and beef is soft Check seasoning.
