From Cáceres with love, this typical Extremaduran soup makes the most of our seasonal tomatoes with these ingredients: 500 grams of peeled tomatoes. Half a red onion. 1 mixed bell pepper (orange and green). 2 bay leaves. One heaped teaspoon of sweet and sour paprika from La Vera. Pounded in a mortar: 2 cloves of garlic. One heaped teaspoon of cumin seeds. Olive oil. Salt. Toasted bread slices.
