SIMPLE BROWN BUTTER SOFT COOKIES ❤️INGREDIENTS ❤️BROWN BUTTER INGREDIENTS 👉120 g Butter or blended butter. If using the regular method instead of brown butter, use 100 g butter. I used a mixture of Westgold and Anchor. 👉2 g Instant Coffee Powder, optional. DOUGH INGREDIENTS 👉190 g Medium-protein Wheat Flour. You can substitute mocaf flour, but reduce the amount by 15 g to avoid over-crowding. NOTE: I find that Bola Salju brand flour produces crispy cookies on the outside and soft on the inside. 👉15 g Cornstarch, optional. If you skip this, replace it with equal portions of wheat flour. 👉3 g or the equivalent of ½ tsp salt 👉2 g or the equivalent of ½ tsp baking soda 👉80 to 100 g brown sugar, to taste. BTW, brown sugar is not palm sugar; using palm sugar tends to have a drier texture. 👉40 to 50 g powdered sugar or finely ground granulated sugar. Note: Adjust the amount of brown sugar or powdered sugar according to your taste, but don't use less than the recommended amount to ensure the cookies are moist and moist. 👉1 Egg 👉1 tsp vanilla extract or substitute with ½ tsp vanilla powder TOPPING AND FILLING 👉Sufficient chocolate chips or Callebaut callets or Couverture chocolate chunks, or a mix of all three, totaling about 150 g 👉Sufficient chocolate for topping, optional.
