Truck Camping Mount Herman Colorado: Off-Grid Campfire Cooking & Overlanding

May 29, 2026 - Mt. Herman Excursion This week's overlanding adventure takes us up Mount Herman Road into the beautiful Pike National Forest in Colorado! Driving up in the Nissan Titan hauling the camper, I headed to a favorite secluded spot at 9,000 feet. The road was in better shape than last time, but the campsite needed some serious TLC after some messy visitors left trash behind. Once camp was set up and the fire ring rebuilt, I cooked an incredible honey-mustard vinegar foil packet dinner with beef kielbasa, small potatoes, and onions right over the campfire. The temperature dropped into the high 40s overnight, making for a perfectly crisp Colorado night. The next morning, I whipped up a delicious breakfast scramble using the leftovers before fully extinguishing the fire and heading out. Make the sauce by combining the mustard, honey, and apple cider vinegar in a small dish and stir until combined. (This can be done ahead of time!) Tear 4 x 18” pieces of heavy-duty foil for each packet, along with 4 x 16” sheets of parchment paper for each. Layer the parchment paper on top of the foil. Divide the kielbasa, potatoes, onions, salt & spices, sauce, and butter between the four sheets of foil. To form the packets, bring one of the short edges of the foil to meet the other, then crimp around all edges to seal. Cook the packets on a grill (or the grill grate over your campfire) for 18-22 minutes, flipping after 10 minutes, until the potatoes are tender. Remove from the grill and let cool slightly. Open the packets carefully—they will be full of hot steam. Top with fresh parsley and enjoy! Notes Serving size note: This recipe makes 4 moderate servings or 2 servings for two large appetites.
