Join Rida Aftab as she recreates the authentic taste of Lucknow’s royal kitchens, bringing elegance and comfort to your home-cooked meals! 👩🍳💛 👩🍳 Chef: Rida Aftab 📺 Show: Tarka 📌 Channel: Masala TV Lucknowi Pulao Biryani Ingredients: • Chicken – 700 grams • Rice – ½ kg • Food color (yellow) – as required • Dried plums – 100 grams • Tomatoes – 250 grams • Onions – 250 grams • Crushed red chili – 2 tsp • Salt – 2 tsp • Green chilies – 12 • Ginger garlic paste – 1 tbsp • Bay leaves – 4 • Nutmeg – 1 piece • Star anise – 4 pieces • Cumin seeds – 1 tsp • Black pepper – 1 tsp • Kewra essence – 1 tsp • Clarified butter – 1 cup • Dried plums – 100 grams Method: Heat ghee in a pan and fry onions along with whole spices until they turn golden brown. Add chicken and fry until it becomes golden. Then add tomatoes, ginger garlic paste, and all the spices. Cook for about 10 minutes while stirring. Now pour in two glasses of water and let it cook until the chicken is tender. Add the soaked rice and increase the heat to high. When the rice is almost done and ready for dum (steam), add the yellow food color, mint leaves, and kewra essence. Cover and let it steam for about 15 minutes on low heat. Turn off the stove and serve hot. Lucknowi Mutton Ingredients: • Mutton – ½ kg • Tomatoes – 2 • Yogurt – 250 grams • Onions – 2 • Garlic cloves – 10 • Ginger – 1 piece • Whole dried red chilies (long) – 6 • Turmeric powder – 1 tsp • Salt – 1 tsp • Green cardamoms – 4 • Cumin seeds – 1 tsp • Whole black pepper – 1 tsp • Oil – 1 cup • Green chilies and fresh coriander – as required Method: Pour two glasses of water into a pot and bring it to a boil. Add tomatoes, onions, garlic, ginger, and whole spices. Cover and cook until they soften. Then add the mutton and cover again, allowing it to cook until the meat becomes tender. Next, add the whole dried red chilies, turmeric, salt, oil, and yogurt. Cook well, stirring continuously until the oil separates.
