LaLa, soak in water (min 1hr) with salt to remove sands. Wash and drain 2. Ginger small piece, smashed 3. Garlic 2pcs, minced 4. Spring onion, cut 1-2cm long (separate the green and white part) 5. Ginger, julienne 6. Chilli padi, diced Seasoning 1. Potato starch solution 2. Pepper, little Method 1. Place the LaLa in a wok, add in small piece of smashed ginger and little shaoxing wine. Cover and turn to high heat. Shake the wok a bit and once the LaLa shells are opened, turn off the heat. Transfer it on a sieve and rinse with water. Sift the gravy and set aside. 2. Heat wok with oil, add in garlic, white spring onions, chilli and ginger and stir fry till aromatic. Add in LaLa and stir fry. Then add shaoxing wine and mix well. Add back the LaLa gravy and mix well. Bring to boil. After 30sec, add potato starch solution, pepper and green spring onion. Mix well. 3.
