Welcome to Umm Sarah's channel! Today I'm sharing a very special and exclusive recipe: how to prepare surimi, or fish kashir, at home. Everyone knows that store-bought surimi is expensive and contains artificial ingredients, but today we'll make it with economical "kabayla" fish in a healthy way, without preservatives, and perfect for your children. The result is amazing: a wonderful taste, an appearance that looks exactly like the store-bought version, and high nutritional value. Ingredients: Main ingredient: 1 kg kabayla fish (cleaned thoroughly, removing bones and skin to obtain clear fillets). For cleaning and bleaching: 1 tablespoon vinegar + ice water. Spices: 1 teaspoon white fish pastilla spice mix. 1 teaspoon garlic powder. ½ teaspoon salt. (Optional) 1 teaspoon shrimp shells to enhance the flavor. For the batter: 1 tablespoon cornstarch. 2 egg whites (reserve the yolks for brushing). 2 tablespoons ice water. For the outer coating (color): 2 egg yolks. 1 teaspoon paprika. Preparation method (brief description): Wash the fish and remove all bones and skin. Place the fish in ice water with vinegar twice to whiten it and remove any fishy odor. Grind the fish in a food processor with the ice water until you get a smooth paste. Add the cornstarch, spices, and egg whites, and grind again. Shape the mixture onto a sheet of parchment paper greased with oil, then wrap it in aluminum foil in a "boudin" shape (like a sausage). Steame (in a couscous steamer) for 25 to 30 minutes. Brush the surface with the egg yolk and paprika mixture and bake in the oven for 5 minutes to achieve a distinctive orange color. Let it cool completely in the refrigerator before slicing.
