Filipino Quail Eggs Recipe: Quail Eggs - 18 nos Water - As Needed Cornstarch - ¼ Cup Oil (for deep-frying) - As Needed Batter: Maida - 1 Cup Cornstarch - 3 tbsp Baking Powder - 1 tsp Salt - 1 tsp Black Pepper Powder - A Pinch Kashmiri Chilli Powder - 1 tsp Water - As Needed Dipping Sauce: Water - 1 Cup Maida - 2 tbsp Soy Sauce - 1 tbsp Brown Sugar - 3 tbsp Garlic (finely chopped) - 1 tbsp Shallots (finely chopped) - 3 tbsp Red Chilli Flakes - ½ tsp Salt - A Pinch Black Pepper Powder - A Pinch Cooking Instructions: Dipping Sauce: 1. Add all the ingredients into a saucepan. Mix well and simmer for 3 minutes or until the sauce thickens. Quail Eggs: 1.Bring water to a boil and drop the quail eggs in it. Boil for 3 minutes. 2. Cool them down and peel the shells. Dredge the peeled eggs in cornstarch. 3. For the batter, combine all the ingredients except water and mix. Add the water gradually until you get a thick batter. 4. Dip the eggs in the batter. Using a skewer, pick them up and drop them directly into the hot oil. 5. Fry for 3 minutes or until crispy and golden brown in colour. Serve with the dipping sauce. Cooking Tips: 1. Annatto Seeds or orange food colouring is usually used in the batter. Here we have used Kashmiri chilli powder to keep the colour natural and as an easier available alternative. 2.
