Fazzoletti: The Hankerchief Pasta
Basically giant squares of pasta dough, Fazzoletti are an obscure paste that's easy to make. They're also extremely versatile. I go over the basic process of making the pasta with a quick breakdown of 3 different ways you might serve it: with a ragu, Ligurian-style with pesto, potatoes and green beans, and a sort of lasagna-hack called fregnacce Abbruzzesi where the squares are stuffed with meat filling and baked like lasagna.
