With its soft glutinous rice texture, rich grated coconut, and sweet Gula Melaka syrup, Kuih Lopes remains a favorite even today. The recipe I’m sharing is very simple, perfect for those who are just starting to explore traditional desserts at home. So, let’s get started and experience the unique charm of Kuih Lopes together!" 🌸 Ingredients: 1 cup | 225g glutinous rice 90g Gula Melaka (palm sugar) 20g brown sugar 1/2 cup coconut milk 1 1/2 cups | 120g grated coconut Pandan leaves Water Salt KUIH LOPES In the old days, this kuih was often served during festive gatherings and celebrations. With its soft glutinous rice texture, rich grated coconut, and sweet Gula Melaka syrup, Kuih Lopes remains a favorite even today. Method Step 1 : Wash the glutinous rice thoroughly and soak for 20mins. Drain the soaked rice. Place it in a steamer lined with pandan water, salt and coconut milk. Steam over medium heat for about 25–30 minutes or until cooked through and soft. Once done, mix well. Transfer to square tray. Press so its firm. Keep aside. Step 2: In a bowl, mix grated coconut with a small pinch of salt. Steam for about 5–10 minutes to keep it moist and fragrant. Set aside. Step 3: In a saucepan, combine Gula Melaka, brown sugar, water, salt and pandan leaves. Simmer over low heat until the sugar melts completely and turns into a thick syrup. Strain to remove impurities or pandan bits. Let it cool. Step 4: Shape or cut the rice into triangles. Pls watch the video shared for more info. Roll them in the grated coconut until evenly coated. Drizzle generously with Gula Melaka syrup just before eating.
