How to make Black-Eyed Pea Salad. Black-eyed peas combine with fresh vegetables to create a delicious Southern side dish. Ingredient List: 2 cups cooked, drained and cooled Black-eyed peas 3/4 cup chopped fresh tomato 1/2 cup chopped green bell pepper 1/2 cup chopped purple onion 1 jalapeno pepper- fresh or pickled 1/4 cup fresh chopped cilantro Dressing: Juice of 1/2 lime 1/8-1/4 tsp salt (1/8 tsp for canned peas that have been seasoned) 1/8 tsp black pepper 1/2 tsp granulated white sugar or substitute 2 Tblsp vegetable oil Prepare salad as shown in video.
