Addicting Easy 15 minute Weekday Pasta | Cherry Tomato Pasta

We think that the best pasta dishes are the simple ones and it doesn’t get much simpler than this (spoiler alert: we have 2 recipes coming up that are easier than this one)! Cherry tomato pasta comes together almost as quickly as it takes your pasta to cook. The perfect weeknight meal that you won’t believe is made up of 6 ingredients (including the pasta!) that can go from the pantry to the table in less than 20 minutes. When we discovered this recipe, we cooked it weekly for months and months. Tip: You don’t need to cut the tomatoes in half, but it will save you a tonne of clean up later because it stops the tomatoes from sizzling and spitting oil and sauce when the tomatoes burst in the pan…trust me! Ingredients • 600g Cherry tomatoes (halved) • 1 Packet or 500g of pasta (this recipe used linguine) • 5 Cloves of garlic • 1 tsp Chilli flake • 4 Tbsp Olive oil • 3-4 Tbsp Parsley • 1 Tbsp Salt (for water) Instructions 1. Bring 2L of (salted) water to boil 2. When the water starts to boil, add the pasta a. Cook the pasta 2 minutes less than the packet instructions When the water starts to heat up 3. Put a large pan on medium-low heat 4. Pour olive oil into pan 5. Add 4 parsley stems and chilli flakes 6. Add halved cherry tomatoes 7. Cook until tomatoes start to soften 8. Then add the crushed garlic 9. Cook until tomatoes break down 10. Remove the parsley stem 11. Add a pinch of chopped parsley 12. Add the pasta to the pan (2 minutes before the packet says to cook the pasta) 13. Mix the sauce and pasta together (with enthusiasm!) 14. Pour in some pasta water a few tablespoons at a time 15. Keep mixing the pasta until the sauce thickens (adding more pasta water as needed) 16. Once the sauce thickens, turn off the heat 17. And mix through the rest of the parsley 18.
