Maishähnchen vom Drehspieß - Vergleich mit Brine und ohne. Was ist besser?

Today we're testing corn-fed chicken on a rotisserie – comparing it with and without brine. Which is better? What is a brine? A brine consists of water, juices, salt and sugar, herbs, etc. If you place various meats in such a brine, osmosis and permeation (penetration) occur. The meat absorbs the brine, and the salt, sugar, herbs, etc. penetrate the meat and gently season it. This makes it juicy and tender. But see for yourself..... Yours, Michael Ingredients: 2 corn-fed chickens, approx. 1.5 kg For the brine: 4 oranges 1 lime 500 ml cloudy apple juice 200 ml beer 2 onions 2 spring onions 3 cloves garlic 2 chili peppers 2 tbsp fresh oregano 1 tbsp fresh thyme 3 tbsp salt 2 tbsp pepper 2 tbsp soy sauce 1 tsp cinnamon 1 tbsp honey 3 tbsp brown sugar 8-10 slices ginger Water to fill Chicken seasoning: 6 tsp salt 2 tsp pepper 2 tsp paprika 1 tsp curry powder ½ tsp onion granules enough for 1 chicken. Preparation: Squeeze the juice from the oranges. Slice the lime. Roughly chop the rest that can be cut and put all ingredients in a pot. Add the liquids, roughly press the lime slices, and add them as well. Mix everything well. Then we add the chicken and stir some of the ingredients into the chicken. Now we fill the whole thing with enough water to cover the chicken. And let it sit in the brine for 24 hours. In the refrigerator, of course. After 24 hours, we remove the chicken from the brine, remove any herbs, etc., and pat it dry. Be very careful, otherwise you won't get a proper crust. Now we'll dust the outside again with chicken seasoning, and then the whole thing goes on the rotisserie until it reaches an internal temperature of 80 degrees.
