This crustacean is caught from December to April, so it's time to take advantage of it and enjoy it. A spicy recipe that will delight everyone! Ingredients: • 500g spaghetti • 2 dozen sea urchins • 4 peeled tomatoes • Olive oil • 1 lemon (juice and zest) • Marinated garlic • Fresh herbs (parsley, chives) • Breadcrumbs • Salt, white pepper Preparation: 1. Cook the pasta (al dente: 9 min). 2. Open the sea urchins. Then remove the coral (the orange part) and filter the water from the sea urchins to keep it. 3. Garnish the pasta with the peeled tomatoes and olive oil. 4. Finish cooking the pasta with the cooking water. Stir in the filtered sea urchin juice. 5. Add half of the opened sea urchins to the pasta, keeping the other half for serving. 6. Thicken the pasta sauce. Add lemon. Garnish with marinated garlic and fresh herbs.
