Homemade Nettle Tortelli and Slow-Cooked Ragù | Pasta Grannies
Today we are in Casalfiumanese, joined by Vittorio, his wife Giovanna, and their friend Liliana as they make nettle tortelli. This is a dish they often prepare as volunteers for the local sagra. Filled with ricotta and Parmigiano Reggiano, with wild nettles incorporated into the dough, these tortelli are served with a slow-simmered ragù—Vittorio’s recipe. Delicious!
