It’s starting to feel like fall here in LA, so we thought you might like to join us for a cozy morning! 🍂 Give this video a thumbs up if you want more chill vlogs at home! Linda’s Butternut Squash Soup Recipe: Soup Base: ⁃ 2 Butternut Squashies - chopped *Save the seeds and roast them for topping the soup later! ⁃ Heat olive oil and a few tablespoons of water in saucepan ⁃ Cover + Cook butternut squash in pan until soft ⁃ Halfway through, add spices: Smoked Paprika, Cloves, Black Pepper, Cayenne if you want some spice ⁃ Add veggie broth/ veggie boullion (if salted, no need to add extra salt!) ⁃ Once squash is soft, transfer to blender Add 2 cups of boiling water (more/less depending on desired consistency) & Purée. *I also added in fresh basil and puree’d! Added some freshness to all the warm spices. Sautéd Apple Toppings: ⁃ Dice/chop 2 apples ⁃ In same saucepan, heat butter ⁃ Add apples & stir Add a tablespoon of brown sugar ⁃ Sauté until sugar is caramelized and butter is browned Butternut Squash Seed Toppings: ⁃ Wash and dry seeds ⁃ Layout on baking sheet ⁃ Season seeds lightly with butter or oil, nutritional yeast and salt if desired. Or just have them plain! ⁃ Bake at 350 for 10 min ish (Keep an eye on them…. they burn quickly!) Pour soup into bowl.
