Let’s dive in and make your kitchen smell like Bengaluru! 📋 Ingredients Medium Rava – 1 cup (250g) / ಮೀಡಿಯಂ ರವಾ – ೧ ಕಪ್ (೨೫೦ ಗ್ರಾಂ) Whisked curd – 300 ml / ಕಡಿದು ಮೊಸರು – ೩೦೦ ಎಂಎಲ್ Urad dal – 3 tbsp / ಉದ್ದಿನ ಬೇಳೆ – ೩ ಟೇಬಲ್ ಸ್ಪೂನ್ Chana dal – ½ tsp / ಕಡಲೆ ಬೇಳೆ – ೮ ಟೀಚ್ ಸ್ಪೂನ್ Mustard seeds – ½ tsp / ಸಾಸಿವೆ – ೮ ಟೀಚ್ ಸ್ಪೂನ್ Cumin seeds – ½ tsp / ಜೀರಿಗೆ – ೮ ಟೀಚ್ ಸ್ಪೂನ್ Chopped ginger – ½ tsp / ನರಿ ಶುಂಠಿ – ೮ ಟೀಚ್ ಸ್ಪೂನ್ Green chillies (chopped) – 4 / ಹಸಿಮೆಣಸು – ೪ Curry leaves – 1 tbsp / ಕರಿಬೇವು – ೧ ಟೇಬಲ್ ಸ್ಪೂನ್ Coriander leaves – 1 tbsp / ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು – ೧ ಟೇಬಲ್ ಸ್ಪೂನ್ Dill leaves – 1 tbsp / ಸಬ್ಬಸಿಗೆ ಸೊಪ್ಪು – ೧ ಟೇಬಲ್ ಸ್ಪೂನ್ Salt – to taste / ಉಪ್ಪು – ರುಚಿಗೆ ತಕ್ಕಷ್ಟು Baking soda – ¼ tsp / ಬೇಕಿಂಗ್ ಸೋಡಾ – ¼ ಟೀಚ್ ಸ್ಪೂನ್ For Garnishing / ಅಲಂಕಾರಕ್ಕೆ: Grated carrot – 1 tsp / ತುರಿದ ಕ್ಯಾರೆಟ್ – ೧ ಟೀಚ್ ಸ್ಪೂನ್ Fried cashews – 20 / ಹುರಿದ ಗೋಡಂಬಿ – ೨೦ Coriander – 1 tsp / ಕೊತ್ತಂಬರಿ ಸೊಪ್ಪು – ೧ ಟೀಚ್ ಸ್ಪೂನ್ ⏱️ Short Video Chapters 00:00 – Intro 00:53 – Ingredients 01:50 – Tempering 03:10 – Roast Rava 04:00 – Batter Mix 05:55 – Batter Rest 06:30 – Prep Moulds 07:20 – Steaming 08:35 – Ready Idlis 09:25 – Final Tips Tips & Tricks Section Roast the rava well: Ensuring the rava is golden and aromatic gives your idlis a non-sticky, fluffy texture. Don’t skip the curd: Whisked curd brings creamy tang and softness—use fresh curd for the best results. Let the batter rest: Allow the batter to sit for 10-15 minutes after mixing for perfectly soft idlis. Add baking soda just before steaming: This maintains maximum fluffiness. Use ghee for tempering: For an authentic MTR flavor, temper the spices in ghee instead of oil.
