Lamb Stew Recipe Ingredients: 2 - 3 lbs of lamb stew meat, cut into 1 inch chunks ½ yellow onion, diced 4 cloves of garlic, minced ⅓ cup of red wine 2 ½ cups chicken broth 1 ½ tsp. Ground coriander 1 ½ tsp. Dried thyme 1 ½ tsp. Paprika 1 tsp. Salt 2 tsp. Tomato paste 1 cup fresh tomatoes, chopped 2 bay leaves 1 Tbsp. date paste, or 2 tsp. Coconut sugar, optional 3 gold potatoes, organic, rinsed and cut into 1 inch chunks 4 carrots, organic, rinsed, peeled and sliced into coins Olive oil Directions: Instant pot directions: Add 2 tsp. Olive oil to the instant pot and set it to saute for 5 minutes. Add the onion and stir frequently. After 5 minutes add the lamb cubes and saute for an additional 5 minutes. Next add the garlic, tomatoes, red wine, tomato paste, date paste, bay leaves, coriander, thyme, paprika, salt, and chicken broth. Stir to combine. Place the lid on the instant pot and the pressure valve to seal and pressure or stew/soup setting depending on your unit. Cook on high pressure for 20 minutes. Release the pressure and when it’s completely released, open the lid carefully. Add the potatoes and carrots and cook for an additional 5 minutes on high pressure just as before. Cooking notes: If you want to make the sauce a little thicker, add 1 Tbsp. or more, of arrowroot to the stew when you add the potatoes. Mix 1 Tbsp. of arrowroot to 1 Tbsp. of chicken broth and stir before adding. Stir it in. If you don’t have an instant pot, you can still make this in a regular stock pot or a slow cooker. In a regular stock pot, just brown the onion and meat as we did in the instant pot and then put all the ingredients in except the potatoes and carrots. In a stock pot the potatoes and carrots will take about 40 minutes to cook so add them the last 40 minutes of cooking. I would simmer the stew for about 2 to 2 ½ hours total. Slow cooker: Saute the onion and lamb in a frying pan over medium high heat with a little oil before adding to the slow cooker. This step adds so much flavor. Add enough chicken broth to cover all the ingredients including the potatoes and carrots. Cook on low for 7 - 8 hours or high for 3 to 4 hours. Enjoy! Thanks for watching and sharing!
