Wash and drain well. Dry them indoors for 2–3 days to retain the green color. Once dried, they will shrink and become crisp. Roast Drumstick Leaves Heat a kadai on medium flame and lightly roast the dried drumstick leaves until the raw smell disappears. Do not over-roast. Transfer to a plate. Roast Curry Leaves Lightly roast curry leaves until crisp. When pressed, they should crumble easily. Set aside. Roast Lentils Separately Roast black urad dal until slightly golden Roast white urad dal separately Roast chana dal until aromatic (Always roast on medium flame without burning) Roast Other Ingredients Roast raw rice (optional, adds texture) Roast sesame seeds until they start to crackle Roast coriander seeds and pepper together Roast dry red chillies carefully without burning Heat Salt & Add Hing In the same hot pan, lightly heat the salt. Then add asafoetida and switch off the flame. Grinding Allow everything to cool completely. First grind the dals, spices, and other ingredients into a coarse powder. Then add drumstick leaves and curry leaves and grind again. Final Mixing & Storage Mix all batches well to ensure even texture. Let it cool completely, then store in an airtight container or glass jar.
