The perfect lemon cake – soft, moist & aromatic Today we're making the perfect lemon cake – soft, moist, with a wonderful citrus aroma, delicate lemon cream, and light, creamy mousse. The cake is perfectly balanced: pleasant acidity, subtle sweetness, and an incredibly smooth texture. I'll show you all the important details – so be sure to watch until the end to ensure your cake turns out perfectly the first time! Let's go! 🍋 🍋 For the lemon sponge cake: 6 medium-sized eggs. 260 g sugar. Beat the mixture for 7-8 minutes until it is creamy and airy. 80 ml vegetable oil (odorless). 150 ml milk. 60 ml lemon juice. 1 tsp lemon extract (or lemon zest). 360 g wheat flour. 15 g baking powder. ½ tsp salt. Mix well. Sift half of the dry ingredients. Mix. Sift the remaining dry ingredients. 130 ml boiling water. Baking pan with a 22 cm diameter. Bake in a preheated oven at 170–180 °C until a wooden skewer comes out clean. Allow to cool completely. 🍋 For the lemon cream: 60 ml water + 10 g gelatin. Stir and let it soak for 7-10 minutes. 200 g sugar (adjust the amount of sugar to taste). 10 g cornstarch. Zest of 1 lemon. A pinch of turmeric. Mix well. 3 medium-sized eggs. 130 ml lemon juice. Heat gently, stirring constantly. Heat to approximately 82 °C (the mass begins to evaporate rapidly). When the cream boils, an eggy taste and smell develops! Therefore, I recommend keeping an eye on the temperature! Remove from the heat. Pour the hot cream through a sieve. Add gelatin. Mix thoroughly. Allow to cool to approximately 40–45 °C. 90 g butter. Mix thoroughly. Allow to cool to room temperature. 🍋 For the mousse: 30 ml water + 5 g gelatin. Let it soak for 7-10 minutes. 250 g cream (33–36%). 1 tbsp icing sugar. Dissolve the gelatin in the microwave using pulsed mode. Add to the cream. Mix thoroughly. 🍋 Let the cake set in the refrigerator for 1.5–2 hours. For decoration: 250 g cream (33–36%) + 1 tbsp icing sugar. Lemon zest. Just look how delicate the cut is – airy sponge cake, bright lemon layer and light, creamy mousse… This festive dessert looks spectacular and is much easier to make than it looks.
