Belgians are much more quality-conscious when it comes to mussels, while the Dutch are primarily concerned with price. What matters most with mussels isn't so much the size of the shell, but the weight of mussel meat inside. The best mussel contains a "large fish," as they say in Zeeland. In the Netherlands, consumers have little to no choice. Mussels are not only a restaurant dish, but also a supermarket item, and in the supermarket, you'll usually only find one type of blue box, containing both full and less full mussels.
