Rick Stein brings the flavours of Southern India into the MasterChef kitchen with a fragrant Madras Fish Curry, spiced pulao rice, and a fresh kachumber salad 🌶️🐟🍅 “Simple food — that’s the kind of food I love.” ❤️ Ingredients Madras Fish Curry 800g firm white fish (kingfish, snapper, or similar), cut into chunks 2 onions, finely sliced 3 tomatoes, chopped 2 tbsp tamarind paste 2 tbsp vegetable oil 1 tsp yellow mustard seeds 10–12 curry leaves 1 tbsp Kashmiri chilli powder 1 tbsp coriander seeds, crushed 2–3 fresh green chillies, sliced lengthways Salt, to taste Water, as needed Fresh coriander, to garnish Pulao Rice 2 cups basmati rice 2 tbsp oil or ghee Whole spices (such as cumin seeds, cloves, cardamom, bay leaf) 4 cups water or stock Salt, to taste Kachumber Salad 2 tomatoes, sliced 1 onion, thinly sliced Fresh coriander leaves 1 tsp ground cumin Pinch cayenne pepper 1 tbsp vinegar Salt, to taste Method 1. Make the Pulao Rice Heat oil in a saucepan. Add whole spices and cook until fragrant. Stir in the rice and coat well in the spices. Add water and salt, bring to the boil, then reduce heat and cook for 10 minutes or until fluffy. 2. Prepare the Curry Base Heat oil in a large pan. Slowly cook the onions for about 10 minutes until soft and lightly golden. Add mustard seeds, curry leaves, Kashmiri chilli powder, and crushed coriander seeds. Stir through the tomatoes and cook until softened. Add tamarind paste and a splash of water if needed. 3. Cook the Fish Add the sliced green chillies. Gently place the fish into the sauce. Simmer for about 5 minutes until the fish is just cooked through. Garnish with fresh coriander. 4. Make the Kachumber Salad Combine tomatoes, onion, and coriander in a bowl. Sprinkle with cumin, cayenne pepper, salt, and vinegar. Toss lightly and serve fresh. To Serve Plate the fragrant pulao rice alongside the Madras fish curry and kachumber salad. Finish with extra coriander and enjoy with naan or papadums if desired.
