Many tubs in the butter aisle don't hit that — they're margarines or "vegetable oil spreads" (sometimes under 30% fat, the rest mostly water and oil), wrapped in packaging that implies dairy. Every fact here comes straight off the label. THE THREE CATEGORIES: real butter = ≥80% milk fat (just cream + salt). Margarine = ≥80% fat but plant-based. "Vegetable oil spread" = below 80%, and some are mostly water. Imperial Spread, for example, is a 27% vegetable oil spread — meaning roughly 70% water, no dairy at all. THE LABEL TRAPS: Country Crock's plant butters have faced multiple class actions alleging the "made with olive oil" (or almond, or avocado) hero ingredient is actually the LAST oil listed, behind palm and canola. Some spreads lead with "yogurt" that's ~10% of the formula. "Natural flavors" can hide a lot. And canola blends are often refined with hexane, a solvent that never appears on the front. THE 2-WORD RULE: real butter is cream and salt. That's it.
