The Only Seafood Paella Video You Need From a Chef With 30 Years Experience in Mallorca
Rafael has spent 30 years working in kitchens, building the kind of experience that only comes from decades behind the stove. In July 2025, he opened Gozo Gastrobar in Son Servera, Mallorca, and this is where we joined him inside the kitchen as he made seafood paella from scratch. This is not a studio recipe or a staged cooking demonstration. It is a close-up look inside a real Mallorca restaurant kitchen, following an experienced chef at work and hearing his own thoughts on paella, the importance of using the right rice and what three decades in kitchens have taught him about cooking for people. When asked about the secret to good paella, Rafael keeps it simple. For him, there is no magic trick. His philosophy is about cooking food you would be happy to eat yourself, looking after the customer, treating people well and making sure they leave satisfied. After 30 years in the kitchen, that human connection still matters as much as the food.
