They are over 90% water so they need lots of moisture. The best indicator of having good surface conditions is to see lots of little water droplets on the surface. What initiates pinning is to have those water droplets evaporate, so the best method is to have some of them evaporate, then mist again, and repeat. This is why you do not want too much RH (relative humidity) as that will not help evaporation. Just focus on the substrate, nothing else. Forget about the walls, just look at the surface of the sub. The fruits will be coming from there, not the sides of the tub. And yes, fruits can be misted as long as you don't hose them down point-blank for a long period of time. Do it from afar as I demonstrate in this video.
