Chikubushi, located in Kojimachi, Tokyo, is a stand-up soba restaurant operated by a Tsukiji ice sales company, located in the basement of a building directly connected to Kojimachi Station on the Yurakucho Line. Ingredients are purchased from Tsukiji, and soup stock is purchased from a long-established wholesaler in Kyoto. Because of the trust they have with the people of Tsukiji, they are able to show us the best products of the day. For the soup stock, we purchase a mixture of sababushi, Sodabushi, and urumebushi from a long-established wholesaler in Kyoto. It is said that around 200 bowls of Kansai-style soba noodles, which are rare in Tokyo, are sold a day. In addition to soba, we also have a wide variety of rice bowls, and seafood bowls such as tuna pickled rice bowl, green onion toro bowl, and whitebait bowl made with fresh ingredients are popular. The store also sells bento boxes, with 10 different types of meat and fried foods available each day. On most days, they sell 80 bento boxes, which are reasonably priced from 400 yen. Because of its large volume, it is a strong ally for office workers in office areas. It also operates as a standing bar at night, and fresh seafood snacks such as sashimi are also popular.
