Mix well until the chicken is evenly coated. Marinate for 30 minutes. Heat oil in a deep pan and deep-fry the marinated chicken until golden brown and crispy. Remove and place on a paper towel to drain excess oil. In a separate bowl, mix together the chili sauce, oyster sauce, honey, ketchup, red chili powder, black pepper, cornflour, and water until smooth. Set aside. Heat a little oil in a pan. Add the crushed garlic and cashew nuts, julienne cut, then sauté until the garlic is fragrant and the cashews are lightly golden. Remove them from the pan and set aside. Pour the prepared sauce mixture into the same pan. Stir continuously and cook for 5 minutes, or until the sauce thickens slightly. Add the fried chicken, the sautéed garlic and cashew nuts, and the julienne-cut green capsicum. Toss everything together until the chicken is evenly coated in the sauce. Cook for 2 minutes, keeping the capsicum slightly crisp. Garnish with chopped spring onions and sprinkle sesame seeds on top. Serve hot with fried rice or noodles. Enjoy! 🍗✨
