INGREDIENTS: 2 sachets of pineapple gelatin, 80 or 85g each = 160 or 170g 400ml whipping cream (whipping cream for Chantilly) 1 can of pineapple in syrup, 800g 1 ripe coconut, grated flesh = 150g + or - = 15 tablespoons 300ml boiling water (you can use the pineapple syrup) = 1 cup + 4 tablespoons = 22 tablespoons Glass mold PREPARATION: Cut the pineapple into small pieces and set aside. In a blender, pour the boiling water (you can use the pineapple syrup) and add the gelatin. Mix well until completely dissolved. Add the heavy cream to the gelatin mixture and blend again until smooth. Add half of the diced pineapple and half of the shredded coconut and blend until the pineapple dissolves. Place the mixture in the mold, refrigerate for 1 hour, and top with the remaining diced pineapple and shredded coconut. Refrigerate for at least 2 hours.
