STRAWBERRY GALETTES 🍓 Ingredients (for 9 pieces): Cottage cheese — 200 g Butter — 100 g Sugar — 80 g Egg — 1 pc. Flour — 250 g (+ approx. 50 g for dusting) Baking soda — 1 tsp. (or 1 tsp. baking powder) Vanilla sugar — 1 tsp. Strawberries — 300 g Pinch of salt Starch or flour for the filling Preparation: All products should be at room temperature. Break the egg into a deep bowl, add a pinch of salt, vanilla sugar and sugar. Beat everything with a whisk for 1–2 minutes. Add the soft butter and mix again. If you didn’t have time to get the butter in advance, you can warm it up a little in the microwave, but it shouldn’t become liquid. Add the cottage cheese. It’s better to use less granular cheese. If the cheese is granular, you can first beat it with a blender or rub it through a sieve. Add soda or baking powder to the flour and mix. Gradually, in several stages, add the flour to the cheese mass, stirring with a spatula. You don’t need to knead the dough for a long time - just gather it into a homogeneous lump. Dust the table with flour if necessary. Wrap the dough in a bag or cling film and send it to the refrigerator or freezer for 20–30 minutes. While the dough is cooling, prepare the filling. Wash, dry and cut the strawberries into medium slices. Instead of strawberries, you can use any seasonal or frozen berries and fruits. If you use frozen ones, be sure to add a little starch to them so that they do not release too much juice. Place the cooled dough on a floured table and divide into 9 parts. For accuracy, you can use kitchen scales. Form each part into a ball and roll it into a circle about 2–3 mm thick. Place the blanks on a baking sheet. Pour 1 teaspoon of starch or flour into the center of each, and put the filling on top. If the berries were previously mixed with starch, add ½ teaspoon each. Lift the edges of the dough and form biscuits. Brush them with a beaten egg. Bake in a preheated oven at 170–180°C for about 30–40 minutes. Focus on the features of your oven.
