Shut Down Procedure
Jim was boiling today on a 2x6 Corsair with Hybrid Pan and Forced Draft. Now, Jim demonstrates how to safely shut down the evaporator with very little sap left in his head tank. In this scenario, we are boiling in a warm showroom, so we are unable to leave the sap sit in the pans for very long or it would spoil.
