Today is herb harvest day. I'm cutting thyme to lay out to dry. Therefore, I'm using the parts of my winter-hardy thyme plant that aren't yet in bloom. I'm leaving the parts with flowers. Bees love them. Flowering stems can also be used for cooking. Dried thyme is used both for cooking in winter and as a remedy for coughs and bronchial complaints.
